[CenturyTel] Type of wire to use for bonded DSL connection

CL tech was out yesterday and I am happy to have scored a C3000A from him, which can do Bonded. But I couldn't go Bonded immediately as my house wiring is typically helter-skelter telephone wire i.e. multiple runs of 4w twisted some daisy-chained and some Star arrangement. He recommended a direct run from NID to Modem and I'm not there yet. He advised me to run a CAT5 cable to my C3000A, and I neglected to ask him: if Bonded only requires two twisted pairs, why not use telephone wire? Could be wrong but doesn't telephone wire twist as well, and have heavier guage wire, thus would work just as well? What's the magic of CAT5 in this instance?
